About Nick's FishmarketManagement Team
Director of Operations Don started in Honolulu at Tri Star Restaurant Group in 1993 as a bus boy's assistant. He eventually worked his way up to a captain and in 1998 re-located to Maui to open Nick's Fishmarket Maui and was an assistant manager on the opening crew. Don became Maui's Director of Operations in 2004. He got married in 2001 to his beautiful wife, Desiree. They had twin girls in 2007 named Samantha & Sofia and are expecting a son in early 2008. Don is an avid surfer and award-winning paddler. 
General Manager Doug joined Tri Star Restaurant Group in Honolulu in 1991 as a sophomore at the University of Hawaii and worked his way up through the ranks. He re-located to Maui in 2001 and was a Captain & Wine Director. Doug was named General Manager of Nick's Fishmarket Maui in 2004 and is responsible for creating and maintaining all the company's wine programs. He is a die-hard Pittsburg Steelers Fan and travels to about 4 games per season, throughout the country. He is also a Certified Sommelier from the Court of Master Sommeliers as of 2006. 
Senior Executive Chef Geno started at Nicholas Nickolas in 1995 in the kitchen pantry. He worked his way up to head line cook. He re-located to Maui in 1998 to open Nick's Fishmarket Maui, then under the leadership of Chef George Gomes, Jr. became Executive Chef on the opening crew of Sarento's on the Beach. Geno then opened Son'z as the Executive Chef and with Chef Gomes, Jr. developed their award-winning menu. He is married to the beautiful Kim and they have 3 daughters; Karen, Kaira & Kayana.
